Meal Prep Made Easy

           There are people in this world who are meal prep professionals. They create masterpiece entrees that look like they were purchased from a restaurant. They find ways to store their perfectly portioned protein, carbohydrates, and vegetables in beautiful arrangements. This is not who I am. At all. I have accepted it. I have come to terms with it. So, here is how I have found the easiest way to meal prep while taking the least amount of time possible.

            Rotisserie Chicken: Rotisserie chicken is a lifesaver when attempting to prep meals. My personal favorite place to buy them is Sam’s Club, because they have the biggest birds for the lowest price. The chicken is relatively inexpensive (around $6) and can last several meals. There are various recipes for salads, soups, and casseroles that involve rotisserie chicken.             Energy Bites: Energy bites are the easiest way to satisfy hunger cravings. They can be made in different flavor variations, like Key Lime Pie and Peanut Butter and Jelly. My energy bite preparation this week. 

            Hard Boiled Eggs: Yes, they smell to high heavens, but having hard boiled eggs on hand saves me from munching on unhealthy foods in the middle of the day. They keep me feeling full for quite some time, and are a good source of protein. A quick tip…I have found that if you take the egg shell off at home, it prevents the egg from smelling too much at work.

            Container Storage: The easier it is to store your food, the more apt you are to use it. I purchase these bento box inspired containers off of Amazon, and they are perfect! http://amzn.to/2qVc3BA

Each container contains three different sections. I use one for protein, one for a vegetable, and one for a carbohydrate like quinoa or potatoes. This makes preparation a breeze, and allows for me to grab it quick while I am running out the door in the morning.

            My final advice that I can offer is…if you prepare a meal for lunch, then you need to eat that meal for lunch. Do not take the time to prepare a meal and then journey off to Jimmy John’s with coworkers. Respect your time and the energy that you put forth in creating healthy meals for yourself. You will be happier in the long run.

  2. Meal prepping is so hard! Thanks for the tips. I'm a big fan of rotisserie chicken. The low cost really makes cooking your own chicken obsolete. It's just not worth the labor. The breasts aren't my favorite, so I will save those to make into chicken salad. I also love hard-boiled eggs, but could care less how my coworkers feel about the smell lol.

    1. Easy proteins are always the way to go! Taking the chicken off the bone is the worst part. I tend to do it all at once and store it in a container, so I don't have the whole chicken sitting in my fridge.

  3. This post is what I needed! Like you, I am always looking for the quickest ways to put food together. My busy schedule allows for little time and energy to cook which can lead to me eating not so healthy of meals. Thanks for the tip on prepping with rotisserie chicken; in the past, I’ve tried to meal prep chicken and ended up throwing it out each time because I didn’t love the way it was cooked.

    1. I have thrown away meal prep chicken, as well. It has a tendency to make a really bland meal if you're not careful. Just because we want something that is quick and healthy, doesn't mean we are ready to sacrifice flavor. Let me know if you come up with any more ideas.   4. These are great tips. I agree that hard boiled eggs are smelly but they do keep you fuller than most foods. Also love the tip about the storage containers. I hate wrestling with them and trying to find the matching lids!!

  5. I never thought of using a rotisserie chicken to save me on meal prep; awesome tip! At one point in my life I use to meal prep on Sunday's for the entire work week. I really need to get back into this and stick too it. Prepping and being prepared really does help you to eat healthy!
